No-Bake Superfood Granola Bars

No-Bake Superfood Granola Bars are homemade, healthy and high-fiber, and don’t come with all the preservatives you might find in store-bought granola bars. These granola bars are easily made vegan or gluten-free. To make vegan, simply swap the honey for brown rice syrup. To make gluten-free, just be sure to use certified gluten-free oats. Enjoy!!

Servings: 16


2 cups old fashioned oats (use certified gluten-free if needed)
2 cups brown rice crisp cereal
1 cup dried cranberries
3/4 cup whole almonds
1/2 cup sunflower seeds
1/4 cup chia seeds
1/2 tsp cinnamon
1/2 tsp salt
3/4 cup almond butter
3/4 cup honey or brown rice syrup
1 tsp vanilla extract


  1. Line an 8x8 baking pan with parchment paper, leaving a few inches overhanging on opposing ends to make for easy removal.
  2. In a large bowl, combine the oats, cereal, cranberries, almonds, sunflower seeds, chia seeds, cinnamon, and salt. Mix.
  3. In a separate bowl, add the almond butter and honey. Microwave for 30-45 seconds, stirring halfway through, so that the honey and almond butter are runny. Stir in the vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well-combined.
  5. Pour the mixture into the prepared baking pan. Tear off another sheet of parchment paper and lay it over top the granola bars. Press VERY firmly using your hands or a spatula. The piece of parchment paper will help reduce sticking as you press. The harder you press, the more likely your granola bars will stay together instead of falling apart!
  6. Refrigerate 30 minutes, up to 2 hours. Remove and slice into 16 bars. Feel free to wrap each granola bar individually. Store in the refrigerator or freezer.
